Chocolate Cake
225g plain flour
350g caster sugar
85g cocoa powder
1½ teaspoon baking powder
1½ teaspoon bicarbonate of soda
2 medium eggs
250ml milk
125ml vegetable oil
2 teaspoons vanilla extract
250ml boiling water
*Grease and line the cake tins with baking parchment
250g butter,
500g castor sugar
3 tablespoons of water
Cooking Method
1. Preheat oven at 180C for about 5 minutes
2. Then place all ingredients, except boiling water, into a large mixing bowl;
3. Using a wooden spoon or electric whisk, beat the mixture until smooth and well combined;
4. Add the boiling water to the mixture, a little at a time until smooth (the mixture will now be very liquid)
5. Divide the mixture into 2 (20cm) square cake tins and bake for 25-35 minutes, or until a skewer inserted into the cake comes out clean.
6. Finally, remove the cakes from the oven and allow them to cool completely in the tins before decorating.
7. For the making the butter cream, take the butter, icing sugar and water and whisk them together or for about 5 minutes or until soft and fluffy
8. After cooling the cake, cut into half, then spread the buttercream on the other half and place the other on top
9. Decorate by sprinkling castor sugar and place cherries on top or anyhow you may wish then serve with coffe. ENDS
